Warm Olives with Orange, Thyme and Vino Cotto
Serve 4

Olives are great to serve with air dried cured meat and with a cheese platter.  Use olives with stone as they maintain their flavours.Warm olives with Vino Cotto


1 ½ cups of kalamata olives, with stone (or mixture of your choice)
2 tbsp olive oil
1 tbsp Vino Cotto
1 garlic clove, peeled and quartered
1 fresh chilli
3 sprigs of lemon thyme
2 strips of orange peel or lemon


Rinse olives under water and drain well.

Place olives and remaining ingredients in a small heavy based saucepan on medium heat for 1 minute.

Reduce heat to low and cook for 5minutes, stirring occasionally or until olives have warmed through.

Turn off the heat and set aside.

Place olives in a bowl and serve immediately alongside some crusty bread.
