The delicious and captivating flavours of our artisan Vino Cotto is the result of  hand-pressing late harvest wine grapes within hours of being harvested to ensure the juice is squeezed out while the aroma and flavour are still intact.  The juice, referred to as grape must is then slowly cooked and reduced for over 16 hours ensuring that every drop is caramelised to produce a sweet, thick and fragrant syrup.  The syrup is then cellared for many months, to further mature and enrich it’s flavours naturally, allowing time to work it’s magic and as tradition demands.

  • No preservatives, chemical additives or sugar is added.
  • No red wine vinegar.  Real Vino Cotto is made from pure grape must and no red wine vinegar.
  • Authentic Vino Cotto has no alcohol.
  • Made in Victoria with locally sourced Victorian late harvest wine grapes.
We source premium late harvest wine grapes from family owned vineyards with well established old vines in the Mallee regions of Victoria, Australia.
