Bresaola and Tomato Salad with Vino cotto

Bresaola is an air-dried cured beef available from Italian delicatessens available at Italian delicatessens.  This dish can be served as an antipasto/starters with a rocket salad or olives.  Serve at room temperate.

30 thin sliced bresaola
6 vine-ripened tomatoes, thinly sliced
200g feta
6 basil leaves, finely sliced
Extra virgin olive oil
Vino Cotto
Sea salt and freshly-ground black pepper


On a serving plate, alternate bresaola and tomato slices in a circular pattern.

Sprinkle with feta and basil.

In a glass jar or small bowl, whisk olive oil and vino cotto, season to taste.  Drizzle dressing over the bresaola and tomatoes.
